Watermelon Caprese Salad

 Looking for a last minute summer recipe, before summer officially comes to an end? It's time to use up the last of the homegrown tomatoes and fresh basil leaves. Maybe this recipe will take you back to June, when summer was just beginning...if only.. This recipe is the perfect side dish, SO juicy and fresh, you will not be disappointed (& super easy too)! Who would have thought watermelon paired with cheese would taste like heaven? Not me. I shouldn't have been so unsure. Here's the recipe! Enjoy! 


Ingredients:
1/4 of a watermelon, cubed
1 1/2 cups of fresh mozzarella balls
2 cups of heirloom cherry tomatoes
handful of fresh basil leaves
2 T olive oil
1 T balsamic vinegar
salt and pepper to taste

Directions:
1. Cube the watermelon into bite size pieces. Add them into a medium size bowl.


2. Cut the mozzarella balls and tomatoes in half and add to watermelon. 
3. Using a knife, cut the fresh basil into strips.
4. Add the olive oil and balsamic vinegar on top.


5. Sprinkle with salt and pepper. 
Happy dogs days of summer.
