Fish Tacos

I have always loved tacos. Any kind of tacos. I love them so much that I have them for my birthday dinner and if you know me, you know how much I LOVE my birthday! Summer calls for a lighter version of tacos, so we decided to cook up some fish tacos! We make these every few weeks and I will admit we switch up the recipe every time we make them, depending on what fresh produce we have. Today, we tried a new twist! Instead of mango salsa, we used fresh peaches from the farmers market! This recipe was so fresh. Perfect for any summer night. I highly recommend! YUM!


Marinade for the fish (we used tilapia)
2 limes, juiced
olive oil
1 jalapeno, seeded/coarsely chopped
1 bunch of cilantro
1/2 tsp paprika
dash of ancho chili pepper
dash of nutmeg
dash of allspice
dash of cayenne pepper

directions:
1. Combine the ingredients needed for marinade in a bowl. Whisk together.
2. Add fish and marinate for 20 minutes to absorb flavors.
3. Add a tablespoon of coconut oil and heat a crueset or skillet over medium high heat.
4. Cook fish for 4 minutes on one side then flip for 30 seconds.
5. Serve on corn tortillas. Top with homemade mango slaw (recipe below).

Peach Slaw
2 fresh peaches, diced
1/2 C kale, chopped
1/2 C cabbage (we used a mix of both red and white cabbage)
1/4 C sour cream
1/4 C salsa
1 T jalapeno pepper hot sauce (Trader Joes)
bunch of cilantro, for garnish

directions:
1. Dice peaches and add to a bowl. Mix in cilantro, kale and cabbage.
2. In a small bowl mix together the sour cream, salsa and hot sauce. Combine to create a sauce.
3. Drizzle sauce over tacos or mix into the peach/greens mixture.
4. Top slaw over fish!
