Ahi Tuna Salad

This recipe was phenomenal. Found in my favorite 21 Day Sugar Detox Cookbook! Nick and I went to Whole Foods and purchased the ahi - we love their selection of fish - so yummy and good. The asparagus, avocado and grapefruit was a perfect pairing. We paired with white rice.  Wonderful summer recipe! 

Ingredients: 
For the tuna
1 pound wild tuna steak
sea salt and black pepper
1 lime, halved
2 T white sesame seeds
1 T coconut oil

For the dressing
1/4 cup sesame seed oil
juice of 1 lime
 2 T minced shallot
2 T minced fresh cilantro leaves
sea salt and pepper for taste

For the salad
1 large bunch of asparagus
2 avocados, sliced
1 ruby red grapefruit
1 teaspoon white sesame seeds, garnish


Directions:


1. Heat skillet over medium - high heat. Season the tuna with salt and pepper and squeeze the fresh lime over both sides. Sprinkle seasame to both sides. When the pan is hot, melt the coconut oil. Sear the tuna for 1-2 minutes on each side.
2. In small mixing bowl, wihisk together the ingredients for the dressing.
3. Slice asparagus into 3 sections each, discarding the bottom tough section.
4. Slice the tuna against the grain into 1/4 inch pieces. Place the tuna on top of the asparagus then top with avocado and grapefruit. 
5. Drizzle dressing and garnish with sesame seeds.
