Homemade Cookie Dough Ice Cream!

Best recipe made of the summer, hands down.
Ice Cream
2 cups heavy whipping cream
2 cups half and half
1 cup sugar
2 tsp pure vanilla extract

combine all ingredients into a bowl. Stir until sugar dissolves.  Freeze in an ice cream maker to manufactures instructions (I used my Kitchen Aid ice cream attachment). It worked great! It spent some time in the freezer while waiting for the cookie dough bites, to firm up a bit!

Cookie Dough Bites

1/2 cup all purpose flour
2 1/2 tablespoons brown sugar
3 tablespoons white sugar
2 tablespoons butter, softened
1/8 teaspoons pure vanilla extract
2 tablespoons water
1/4 cup dark chocolate chips

In a medium bowl, mix together the brown sugar, white sugar, and butter until smooth. Stir in vanilla and water. Mix in the flour until well blended. Add in chocolate chips at the end. Shape into a log, and wrap in plastic wrap. Freeze for 1 to 2 hours. Cut into small chunks, and mix into softened ice cream. Freeze for 15 minutes or until firm before serving.
The best part about this recipe is it makes the PERFECT amount. Perfect amount for a store bought quart or homemade recipe!
Cut up into bite size pieces. I kept them pretty big ;) Cookie dough ice cream is only good when each bite has a piece of cookie dough!

We made homemade cookie ice cream sandwiches. Recipe for the cookies here!
Add some pretty sprinkles, pink and orange of course.

Peanut butter cups are always a must.
