As much as I love a good salad,
sushi and other lighter meals, I am a HUGE fan of spaghetti and
meatballs. My mom has always teased me that I'm her 'meat and potato'
girl. I definitely agree with this statement as I literally drool for a
pot pie or a big juicy steak. As tasty as pasta is, I realize the
overload of carbs isn't always the best for my belly so I have found
ways to enjoy pasta with minor substitutions. With the help of my
husband, we made a delicious meal! I was just as satisfied with this as I
would be after regular pasta and bruschetta!
Bruschetta:
Udi's Gluten free bread
Roma tomatoes
Fresh mozarella
Fresh basil, to garnish
Olive oil, drizzled
Balsamic vinegar, drizzled
Sea salt and pepper to taste
Directions:
1. Broil the bread in the oven for 2-3 minutes on each side. Be careful not to burn! I have found that gluten free bread is much more similar to regular bread when it is a little crispy ;)
2. Slice tomatoes and mozzarella. Add on top of toasted bread slices.
3. In a small bowl, add olive oil and balsamic vinegar, minced garlic. Stir.
4. Drizzle the mixture on top of bread, cheese and tomato. Garnish with fresh basil.
Homemade Meatballs:
1 lb of grass fed ground beef
1/4 onion, diced
2 cloves garlic, minced
1/4 cup gluten free bread crumbs
1 large egg
1/4 cup grated Parmesan cheese
Bunch of fresh parsley, minced
Dash of sea salt and pepper
1 T olive oil
Directions:
1. Preheat oven to 350 degrees
2. In a large mixing bowl, add ground beef, diced onion and minced garlic cloves.
3. Add in bread crumbs, egg, Parmesan cheese, fresh parsley and salt and pepper.
4. Form into inch size balls.
5. Using a skillet, heat olive oil over medium high heat.
6. Cook the meat balls for 3-5 minutes so each side is browned.
7. Transfer onto baking sheet lined with parchment paper.
8. Bake for 25 minutes, or until no longer pink.
**Helpful hint for those that are on a time crunch: Whole Foods has amazing meatballs in their fresh meat section. We purchase them sometimes and they are phenomenal.**
Homemade Sauce made by Chef Nicholas:
1 can of organic diced tomaotes
1 can of organic tomato sauce
1 T tomato paste
2 cloves of garlic, minced
2 T olive oil
1/2 onion, diced
1 bay leaf, removed after simmering
1/2 tsp of parsley*
1/2 tsp of oregeno*
1/2 tsp of basil*
Sea salt and pepper to taste
pinch of sugar, to cut acidity
*We use fresh herbs when available/in season.*
Directions:
1. In a cast iron skillet, heat olive oil over medium heat.
2. Add onion and garlic and saute until translucent.
3. Add in diced tomatoes, tomato sauce, tomato paste along bay leaf, parsley, oregano, basil, salt, pepper and sugar.
4. Simmer for 30 minutes on low heat. Remove the bay leaf.
5. Add in additional spices, to taste.
6. Add meatballs into sauce, coating meatballs.
7. Serve over pasta that is cooked according to package. We picked Trader Joe's Organic Brown Rice Pasta :) (Picture below)
