Overnight Oats

Overnights are the greatest summer breakfast ever. I love them so much that last year on our honeymoon (in Hawaii mind you) I seriously couldn't stop thinking of overnight oats. Out of all of the amazing Chicago food to crave, it was overnight oats that I needed more than anything else. The best thing about them is they are so easy to make, so many different recipes online to change it up and they are ready when you wake up in the morning (which is key for morning success for this teacher that is crazy to commute from the city to the suburbs/leaving at the crack of dawn). My favorite type to make is super simple!

Here's the recipe:
 Dry oats (however much you like - I probably use 3/4-1 C)
Milk or almond milk (I switch this up as well)
1 scoop of Greek yogurt
Fresh fruit (my favorites are a mix of blueberries, raspberries and peaches
A little squeeze of honey to sweeten the Greek yogurt (optional)
A dollop of natural peanut butter or almond butter
Your favorite granola to be added the day eaten

All you do is:
Fill a glass container with the oats and JUST enough milk to cover them. Consider the oats will expand! I have made the mistake of adding too much milk and then the oats are soggy, eeww. Next, add in the yogurt, peanut butter or almond butter, honey. No need to mix. Add the fresh fruit on top and cover with lid. Put in the refrigerator overnight. Add granola on top (I love the little crunch). Enjoy!
