One of my favorite things about the summertime is having the chance to cook! I love eating homemade recipes all day :) These energy bites are great to eat at any time of the day. I especially enjoyed them before a morning run or for an afternoon snack to hold me over before dinner. Easy and versatile - I make these differently each time I make it depending on what I have in my pantry.
Ingredients:
- 1 cup quick cooking oats
- 1/2 cup all natural peanut butter (I used half almond butter/half peanut butter)
- 1/3 cup honey
- 1/2 cup coconut flakes
- 1/2 cup flaxseed
- 1 tsp pure vanilla
- 1/2 cup mini dark chocolate chips (optional)
- handful of your favorite nuts - I picked sliced almonds
- 1/4 cup dried fruit (I chose Trader Joes assortment of dried mixed berries).
Directions:
- Add all dry ingredients in a bowl and mix together.
- Add wet ingredients to dry and stir well so that everything sticks.
- Refrigerate for 30 minutes to make it easier to roll into small bite size balls. (I placed the energy bites into muffin liners so they wouldn't get stuck together)!
- Pop two or three (if you can stop there) of these babies every morning for an extra boost of energy!
- Store in an airtight container in the fridge.
